Sugar free chocolate cake

Ingredients:

2 cups of boiled sweetpotato mashed

2 large eggs

1/2 cup of cocoa

1/4 cup activated charcoal powder

1/2 cup maple syrup

1/2 cup coconut sugar

1/4 cup coconut flour

1 tablespoon vanilla essence

2 teaspoons baking powder

1/2 teaspoon sea salt

In a food processor / blender combine all ingredients until smooth ( I used hand blender)

Preheat oven to 180

In well greased cake tins ( use small ones as this is not a big cake) Add batter and place in middle of oven for about 40-50 mins ( keep your eye on it)

Remove from cake tins and allow to cool ( you can even leave in fridge.

Icing:

1 cup mashed sweet potato

1/2 cup avocado

1 cup pitted dates

1/2 cup cocoa powder

2 tablespoons of activated charcoal

3 tablespoons of maple syrup

1 teaspoon vanilla extract

1 pinch of salt

blend all this ingredients until it looks like rich chocolate frosting. Put into fridge for 30 mins and then proceed to ice the cake.
