1 and 1/4 plain flour
1/4 Teaspoon cardamom powder
1 Teaspoon baking powder
1 heaped Tablespoon of semolina
2 Tablespoons of KLIM powder (this is optional)
1/2 tin condensed milk
1/4 teaspoon bicarb
1 Tablespoon ghee
ghee or oil for deep frying
1 and a 1/2 cups of water
2 cups of sugar
egg yellow food colouring ( to enhance colour)
Sift all ingredients together except the flour.
Add in the ghee and mix until it resembles bread crumbs
Gradually stir in the condensed milk to form a soft dough.
Mix in a little flour at a time until the dough is soft but firm.
Roll the dough into elongated finger shapes.
Deep fry until golden brown in colour. Make sure that the heat is medium to high.
Place directly into syrup for a few minutes and remove and let dry.
You can roll into desiccated coconut if you prefer.
For the sugar syrup combine sugar and water until it forms a thick sticky consistency and add a tablespoon of food colouring to add to the colour of your sweetmeat.
